Mmm, this is interesting. Please excuse the US spelling - there is a 'u' in colour, but this is a fantastic, hands-on idea. Perhaps grass is a little slow to grow, but the truth is cress begins with a 'c' so the phonic / alliterative hook wouldn't quite be there... anyway, it's one to ponder.
